Pashaqofta

Pashaqofta is a traditional Albanian dish, especially popular in the south, that combines the flavor of meatballs with the smoothness of a thick, creamy sauce. It is usually prepared with small meatballs of beef or chicken, which are first lightly fried and then simmered in a rich broth. The most characteristic part of pashaqofta is the “pasha sauce”, a mixture of flour, butter, eggs and lemon that gives the dish its white color and distinctive aroma. This sauce thickens slowly with the meatballs, creating a soft, uniform and very pleasant texture. Pashaqofta is usually served warm, as a first or second course, and is often accompanied by homemade bread. This dish represents an old family tradition and is appreciated for its simplicity, light taste and special way of cooking that distinguishes it from soups or stews.
