Oshaf

Oshafi is one of the most special and traditional desserts of Gjirokastra, closely linked to the livestock culture and local products. It is prepared mainly with sheep's milk, sugar and almonds, slowly boiling until the milk thickens and creates a soft cream with a characteristic aroma. The cooking process is simple, but requires care and time for the mass to take on the right structure. Unlike ordinary desserts, oshafi has a special taste that comes from the natural fat of sheep's milk and the mild sweetness that accompanies it. It is usually served lukewarm or cold, especially during the summer season, and is considered a symbol of Gjirokastra hospitality. Oshafi represents an old culinary tradition, fanatically preserved and which continues to be part of the gastronomic identity of the area.
