Kabuni

Kabunia is one of the most characteristic desserts of the Korça and Devoll regions, a simple dish but with a long-lasting flavor. It is traditionally prepared on occasions of family celebrations or joys, but many families also make it as a regular winter dessert, because it is warm, soft and very nutritious.

The preparation of kabunija begins with frying the rice in butter until it turns golden brown and releases its characteristic aroma. Water and sugar are then added, creating a light syrup that is slowly cooked until the rice softens and takes on a distinctive shine.
