Cabbage pie in the Tepelena area is a traditional dish that carries the simple and pure taste of southern Albanian cuisine. In this region, the pie is made with hand-rolled dough, which is rolled out thinly with a rolling pin and greased with olive oil or homemade butter. The cabbage for the filling is selected fresh, usually wild or locally cultivated cabbage, which is slowly stewed with onion, salt and occasionally a little black pepper, taking on a characteristic mild and sweet flavor.
