Birds in saç

Birds in saç is a traditional Albanian dish prepared with small village birds, slowly cooked under a saç, preserving the meat's natural juices, aromas and flavor. The birds are cleaned and cut into pieces, then lightly fried in olive oil or butter to give them color and flavor.

Once browned, they are placed under the broiler along with onions, garlic, tomatoes, red pepper, and simple traditional spices. Cooking under the broiler creates even, consistent heat, allowing the meat to fully tenderize and absorb the flavors of the vegetables and natural juices.
